Super Chocolate Orange Cookies

Ingredients (for 10 pieces)


• 125 g sugar
• 60 g eggs (about 2 eggs)
• 100 g dark chocolate
• 60 g unsalted butter (82.5%)
• 60 g flour
• 25 g cocoa powder
• 1 pinch of salt
• 4 g baking powder
• 35 g heat-resistant chocolate chips


Preparation:


 1. Whisk the eggs with the sugar at high speed until the mixture becomes light, foamy, and voluminous (about 5 to 7 minutes).

 2. Melt the chocolate and butter together in the microwave, in 30-second intervals, stirring well each time.

 3. Pour the chocolate–butter mixture into the egg mixture. Mix gently with a spatula or on medium speed with a mixer.

 4. In another bowl, combine the sifted flour, cocoa powder, baking powder, and salt. Gently fold them into the previous mixture.

 5. Add the chocolate chips and mix again.

 6. Refrigerate the dough for 30 minutes.

 7. Shape the dough into 45 g balls. Place them on a baking tray lined with a perforated or silicone mat, leaving about 6 cm between each one.

 8. Bake in a preheated oven at 180°C (top and bottom heat) for 13 to 15 minutes.

 9. Let cool on the tray. The cookies should remain soft inside and slightly crispy on the outside.
